Balsamic and Feta Cannellini Stew

Ingredients
0.5 tbsp olive oil
400g tin Cannellini
1 red onion
2 salad tomatos
45g feta cheese (meat rennet free)
1.5 tbsp Balsamic Vinegar
Balsamic glaze (optional)
Instructions
Dice red onion
Add to the pan with olive oil until soft (~7 mins)
Slice the tomato and add to the pot with 200ml of water. Place on the lid and leave to simmer for 10 mins
Season with salt and pepper and add balsamic vinegar and the drained beans. Add 200ml of water and leave to simmer on low heat for 10 mins
Crumble the feta into the pot and stir through
Have with bread/rice/potato and enjoy!!
