Sweet 'n' Sour Beans and Tofu

Ingredients
1, 400g tin of beans (I've used kidney beans today)
150g super firm tofu (approx. half a pack)
1 medium onion
Jar of sweet and sour sauce (check labelling for a vegan one; you can make this yourself if you are feeling classy)
70g rice
Optional ingredients as seen in the photo:
2 flathead mushrooms
Leftover peas from yesterdays lunch!
80g cucumber
Instructions
1. Cut the tofu into small cubes. Cut up an onion and any other fresh veg into desired shape and put to one side.
2. Heat a pan and add oil.
3. On a medium to high heat for 10 minutes panfry the tofu, occasionally turning over each cube to ensure an even cook.
4. When golden brown in colour remove and set aside the tofu.
5. Add the onion and other veggies to the pan. Cook to desired result.
6. Drain and add the beans, stirring through occasionally. Allow 4 mins for these to cook.
7. Add the tofu back to the pan and stir through the sauce.
8. Serve with rice or your favourite grain!
